Amberjack season dishes

Cheese-Crusted Amberjack
Ingredients
2 pounds Amberjack fillets
1/2 cup herb and garlic salad dressing
1/2 cup corn flake crumbs
1/2 cup shredded sharp Cheddar cheese
6 Thin Cyprus orange slices


Preparation
Cut fish into serving-size portions. Place fish, single layer, in a shallow baking dish. Pour dressing over fillets; cover and marinate in the refrigerator for several hours, turning fish 3-4 times. Combine corn flake crumbs and cheese; mix well. Roll fish in crumb mixture. Arrange fish in lightly-oiled baking dish; sprinkle with remaining crumb mixture. Bake at 220c gas mark ?? for 15-20 minutes or until fish flakes easily with a fork. Garnish with orange slices.

Amberjack St. Augustine
Ingredients
1 1/2 pounds Amberjack fillets
1 teaspoon ground marjoram
1 teaspoon ground allspice
1 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon ground thyme
2 tablespoons minced onion
1 teaspoon minced garlic


Preparation
Place fish on well-oiled broiling pan. Combine spices; apply generously to fish. Mix onion and garlic; spread over fish. Broil 5-6 inches from source of heat for 15-20 minutes of until fish flakes easily with a fork.
4 servings

Calories 190, Calories From Fat 18, Total Fat 2, Saturated Fat 0g, Trans Fatty Acid 0g, Cholesterol 80mg, Total Carbohydrates 2g, Protein 38g, Omega 3 Fatty Acid .4g

Ginger-Honey Amberjack
Ingredients
1 1/2 pounds Amberjack fillets
1 red bell pepper, seeded, cut into 2-inch strips
1 cup Kantara(Natural) honey
1 yellow bell pepper, seeded, cut into 2-inch strips
2 teaspoons ground ginger


Preparation
Cut fillets into serving-size pieces; set aside. Combine honey and ginger; use half of honey to coat fish evenly. Place on oiled grill over medium-hot coals basting frequently with honey mixture; and turn once. Coat bell peppers with remaining honey mixture and grill with fish until tender, turn peppers often to avoid burning. Fish is done when it flakes easily when tested with a fork.

amberjack tastes horrible in virginia. Full of worms in its tail too. I bet it tastes different overseas.

in Japan its mostly eaten raw. The sashimi is given one of three names based on the size of the fish it came from kampachi, hamachi or buri. I caught my first kampachi a few weeks ago. Yes, thats the smallest sized amberjack

The neck area of the large ones, buri, is often simply grilled with salt and served with white radish, its really delicious.
