Tonights Diner!

Scallop and Prawn Pasta

Inspired by catching a few scallops at the weekend I thought I should do them justice

This is what i have just ate and it was blooming lovely! Would have took a photo but was so ravenous by the time it was cooked i launched into and there was very little left when i gave it a thought. Its probably similar to what other people cook all the time but to all the non-chefs (like me) out there....

Linguine Pasta
Large knob of butter
3 Garlic cloves thinly sliced
Small red onion thinly chopped
Mild green chilli finely chopped
5-6 scallops chopped into chunks
Tiger Prawns (as many as you fancy!)
Chopped Chives
chopped Flat leaved parsley

Begin cooking the pasta. Then melt the butter in a wok/pan and add the onion, garlic and chilli. After a couple of minutes when the onion has softened add the chives, scallops and prawns and cook for a couple more minutes till the seafood is cooked. Add the linguine pasta and mix. Garnish on the plate with the parsley. Serve!

Pretty basic but really tasty and quick!

Re: Tonights Diner!

One hopes you managed a decent white wine to wash it all down? Quick and simple is the way to do pasta al mare in all its forms. Well done, that man!

Good stuff young Jim.
Spot on with a nice crisp bottle of ice cold Riesling.

Re: Tonights Diner!

I rather disagree. Freediving, especially spearfishing, is not only rigorous exercise but you burn up around 1500 cal/hr just keeping warm. Dive often, eat well. Life is good.
