Filleting your catch

Hi All-
I don't know if this has been posted before - I just came across it.

There are movies on there showing how to fillet just about any fish you want. If only he showed how he gets his knife so sharp!

The translations are good for a laugh as well - the one for turbot had me rolling on the floor!

Nice 1 SS I think i'll find this very useful. Take a look in the tools section for sharpening knifes.

There are several filleting videos on youtube. I watched one on filleting a bass & it was short, simple, quick and to the point - excellent. This ones quite good too:

Looks like he might have done a few of those before! Interesting to see that he removed the head, didn't use a traditional Scandinavian filleting knife & periodically wet the blade.

I remember watching the deckhands on the half-day boats filleting customer's catch and they were good but I've never seen anyone take an entire fillet of a fish that large in what is essentially a single stroke. Impressive!

I assume Mahi are ribbed like other fish and he was taking the ribs with the fillet to be removed later?

There is probably a "rib man" just to the right of him. His job is to de-rib, skin and thouroughly wash/rinse the fillets.

When my eldest son is around he's my "rib man"...But lately I've been doing 'em all myself. The de-ribbing is usually made a second operation when filleting alot of fish or else scales and fish slime end up on your fillets.
